Cut the pork chop into smallish cubes. Smush together in a small ziplok bag the olive oil, oregano, thyme, salt, and pepper, then add the cubes and mush around well until quite thoroughly coated. Refrigerate for at least 30 minutes to marinade.

Cook cubes over medium heat in a nonstick pan. No additional oil is likely needed. Cook until they are at least 145. Proven to still be delicious at 170, so don't worry about it too much. Let cool then thread onto skewers (takes 2 total skewers of typical bamboo size and shape).

Amazing picnic fare.
